Subject: Fruits of Africa Pie Recipe

Lesson: 1
Objective: Fine Motor Skills
Ingredients: Directions:
1 1/2 cups papaya or guava or apricot nectar
4 Tbs. cornstarch
4 Tbs. lemon juice
8 Tbs. sugar
1/2 tsp. salt
2 cups diced fresh fruit (papaya, pineapple, melon, oranges or guavas)
1 cup heavy cream
1/2 cup moist shredded coconut
1/2 cup chopped peanuts
Pre-made 9 in. pie crust

Prepare piecrust according to directions.
In a 2 qt saucepan bring nectar to a boil
Dissolve cornstarch in lemon juice
Add 4 Tbs. sugar and salt
Add this mixture to the nectar and cook until thick and clear
Cool mixture slightly
Pour into pie shell and chill for 30 min
Whip heavy cream with 4 Tbs. sugar
Spread with heavy cream on top of pie
Sprinkle coconut and peanuts on the top
