Ingredients: Directions:
2 cups white cornmeal (cornmeal grits,
farina, or cream of wheat may be substituted)
2 cups water
1 tps. Salt

Heat water in saucepan until boiling
Add salt to water
Slowly pour in cornmeal, continuously stirring and mashing lumps
Add more cornmeal until it is thicker than mashed potatoes
Cook for 3 or 4 minutes and continue to stir
Serve with any meat or vegetable stew or any dish with a sauce or gravy

Stir the cornmeal
This is one of the most common foods in Tanzania, it is prepared almost daily. People have two names for this food, when it is of cereal consistence they call it Uji. When it is cooked a little longer and made thicker it is called Ugali, because it can be rolled into a ball.
